Bistro Market ‘Bigger Than Jesus’

Springfield, MO—After years as downtown Springfield’s most recognized poster-board evangelist, Mathew Bolen has traded his post at the corner of South and Walnut for Wagyu beef, fresh ground almond butter, and organic chard.
“Bistro Market is what I’d been praying for,” said Bolen. “When Wheeler’s moved out, I filled the hole in my heart with the corrugated ministry. But now, there’s gelato.”
Art Walkers will fondly remember Bolen as “that crazy sign guy” who chastised a variety of popular weekend activities like dating divorced women and wearing filigreed dress shirts.
While his 3′ x 2′ judgments drew a lot of attention, he realizes that the shocked looks he gets these days are more likely aimed at the robust wine selection behind him. But as Bolen moves out of his role as shepherd and into the line for taboule salad, he hopes his legacy to the downtown scene will not be one of compromise.
“I haven’t given up on the souls of Springfield. I just find it easier to witness when I’m elbow to elbow among them, dozens of them, all waiting for the same [expletive] tomato soup.”
When asked if he thought Jesus would approve of the prices at the new store, Bolen stroked his quad shot Caramel Macchiato and sighed, “I now leave the saving to coupons.”
